Peanut Butter Chocolate Chip Cookie Dough Bites
I came across this recipe last week. This recipe is gluten free which is great for me. They were also very easy to make. The cookies are made with a chickpea base rather than flour and eggs. My kids also enjoyed them.
Makes 14 servings
1¼ cups of chickpeas (garbanzo beans) rinsed and drained
2 teaspoons of vanilla extract
½ cup plus 2 tablespoons natural peanut butter
¼ cup of honey
1 teaspoon of baking powder
Instructions: Preheat oven to 350 degrees. Put the rinsed and drained chickpeas in your food processor and pulse until well ground. Add the remaining ingredients except the chocolate chips and mix until very smooth, scraping down the sides of the food processor a few times to make sure you get the chickpeas incorporated. Stir in the chocolate chips with a spoon.
Roll the dough into 1½ inch balls with wet hands. Place on cookie sheet and bake about 10 minutes. Do not overbake. Let cool and serve.
